An Indian way of having an anti-oxidant rich, probiotic, bone healthy, heart healthy, less fat and energy rich breakfast is idly. Pour idli batter in banana leaf placed idly mold. Banana leaf is rich in polyphenol oxidase which is an enzyme to treat Parkinson’s disease. Banana leaves also have peculiar anti-bacterial properties that can kill germs in the food and aids proper digestion. Banana leaves also have a wax coating that gives it a glossy finish that adds on a subtle flavour to the hot food that is served on it.
INGREDIENTS
IDLY MIXTURE:
Idly rice - 1 cup
Black rice - 1/2 cup
Cholam - 1/4 cup ( sorghum )
Thinai - 1/4 cup ( foxtail Millet)
Flattened red rice - 1/4 cup
Salt to taste
URAD MIXTURE
Urad dal - 1/2 cup
Fenugreek seeds - 2 tsp
METHOD
Soak idly mixture for 4 hrs.
Soak the urad mixture for 30mins.
Soak flattened red rice for 20 mins.
Grind the idly mixture and urad mixture seperately. And mix them together with salt. Ferment the mixture for 8 hrs.
Pour the batter in idly mold with banana leaf at the base. Steam it in idli cooker. Leave for 10 mins. Idly is ready.
Serve hot idlies with coconut chutney and enjoy.
