Beetroot n Soya chunks cutlet

Ingredients

Beetroot (grated) - 1 cup

Onion ( chopped) - 1/2 cup

Mint leaves - 1/2 cup

Boiled potato - 2 nos ( mashed)

Poppy seeds - 1tbsp

Salt to taste

Soyaflakes - 3/4 th cup

Red chilli powder - 1/2 tsp

Garam Masala - 1/4 tsp

Turmeric powder - 1/4 tspGinger - Garlic paste - 2 tsp

Bread crumbs - 1cup

Corn flour - 2 tbsp

Coriander leaves - 3/4th cup

Coconut oil - 6 tbsp

Method

1. Take a thick bottom pan and dry roast the poppy seeds, till it crackles. Remove and keep aside.

2. Boil 500 ml of water in a pan for1 min. Then add the soya flakes to it and leave it for 1min. Then filter the water completely and keep aside.

3. In a pan add 1 tbsp oil and saute the ginger garlic paste, mint leaves, onion, beetroot. Once.1/2 cooked add salt, garam Masala, turmeric powder, red chilli powder and mix well.

4. Lastly add mashed potato, coriander leaves, soya chunks, poppy seeds and mix well.

5. In a bowl add corn flour, water and mix well.

6. Make cutlet shape out of the above mixture and dip in corn flour and keep aside

7. Then coat bread crumbs and shallow fry in a pan with required coconut oil.

8. Serve hot beetroot n soy flakes cutlet with tomato sauce .
